Our Homemade Sausages
Here at Direct Meats we produce a vast array of not only pork sausages, but of other types such as Lamb Merguez and beef sausages for example. As well as different flavours we also produce various sizes of sausage. Some of our sausage offerings can be found around the world in places such as Dubai, Singapore, and Hong Kong to name a few.
Our sausages are composed of an 85% meat 15% fat ratio. Our master butchers hand selects the cuts of pork to ensure this ratio is consistently maintained. This ratio has been tried and tested by our resident chef to ensure full bodied flavour and succulence with every bite.
Once the primal cuts are selected, they are then fed through our industrial sized mincer. This mincer also removes any gristle from the minced primal. Once minced the mince is then fed into the sausage machine. This state-of-the-art sausage machine allows us to make uniform sausages with each being the same weight, shape, and size at the touch of a button ensuring consistency at every point of production.
Our sausages are then gas flushed which replaces the oxygen with CO2 which aids in preservation without ever compromising on quality.
